Stuffed K-Bobs

Since I'm from Texas, you may notice I put a lot of things on the smoker. :) I just love the taste of food when it's been on the grill or smoker. It's healthier too because it doesn't need to be breaded or fried in oil. Fat just drips off it and omg is it ever good! So this is something I made up last night pretty quick. You can put just about anything on a skewer and throw it on the grill for a little while and it's going to be a hit. There's a little something special about these K-bobs though. The mushrooms you see there...are stuffed with sausage and cream cheese! Trust me, it's good. You get that smoke flavor in that cream cheese mixed with the mushroom and bacon on top...so good you will take one bite, walk to your mama's house and slap her. I'm not even kidding. You can put anything you want but this is what I happened to have on hand. I cut up large chunks of onion, pablano pepper, smoked sausage link, and bacon. I then rubbed some olive oil on the mushroom caps so they didn't shrivel up. Stuffed those lil guys with a mixture of sausage and cream cheese. Then put it all together on a stick. I stood them up in the smoker so the cream cheese wouldn't drip out and presto, a great low carb meal that is kinda fun too.

Smoked Chicken Alfredo

1/4 lb sweet butter 
1 cup heavy cream
3/4 cup parmesan cheese, freshly grated
Salt
1/4 teaspoon pepper, freshly ground
Smoked Chicken

Directions:

Grilled or smoked chicken. Pulled apart. (Crock pot chicken works well too just doesn't have that wonderful smoke flavor)

Add all the ingredients to a pot and slow cook till parmesan melts.
Add salt and pepper to taste. Mix in the chicken.

Pour over thinly sliced portabella mushrooms, Shiratake noodles, spaghetti squash, or Dream Fields pasta. Serve immediately.
